EST! EST!! EST!!!.... The wine

The name of this wine comes from a legend. In year 1111 Henry V of Germany was reaching Rome with his army to receive from Pope Easter II the crown of Emperor of the Holy Roman Empire. Following him was also a bishop, Johannes Defuk, wine connoisseur.

To satisfy this passion for the discovery of new flavors, the bishop sent his bowler Martino in advance, with the task of preceding him along the road to Rome, to taste and choose the best wines. The two had agreed a code signal: if Martino had found good wine, he would have to write east, or “there” near the door of the inn, and if the wine was very good, he would have to write east. The servant, when he came to Montefiascone and tasted the local wine, could not otherwise convey the exceptional quality of that wine, decided to repeat the agreed signal three times and to reinforce the message with six exclamation points: EST!EST!EST!

The bishop, who arrived in the village, shared the judgment of his CUPBEARER and extended his stay to Montefiascone for three days.
Indeed, at the end of the imperial mission he returned to him, stopping until the day of his death (which occurred, apparently, for excessive drinking). He was buried in the church of San Flaviano, where you can still read the inscription on the gravestone in gray pepper: “For too much EST! here my lord Johannes Defuk is dead. ” In recognition of the hospitality, the bishop left a citizenship of Montefiascone a legacy of 24,000 shields, provided that every anniversary of his death a bottle of wine was poured into the tomb, a tradition repeated for several centuries.
The bishop is still devoted to a historical procession with characters in costume that revive this legend.

EXTRA virgin olive oil DOP TUSCIA

Tuscia is a predominantly agricultural area and among the main crops there is definitely the olive grove.
Tuscia boasts the production of an excellent quality extra virgin olive oil, with the denomination DOP, obtained from the olives of three varieties (Frantoio, Canino and Leccino). The characteristics of this oil at the time of placing on the market are: emerald green color, with golden reflections; fruity smell that remembers the healthy, fresh fruit, harvested at the optimum maturation point; medium fruity flavor with balanced aftertaste of bitter and spicy with variable intensity; maximum total acidity of 0.50%.
The territory of Montefiascone is among the ones with production with DOP recognition.

The harvest period of olives is from the beginning of November to the end of December and is mainly carried out by hand.

The newly produced oil is great to taste with the typical bruschetta or toasted bread.
